Transporting Food

Two Key Safety Issues:
  1. Protect food from contamination
  2. Maintain the appropriate temperature
  • Use container with lids or completely wrap in aluminum foil or plastic
  • nDistance: short journey, use insulated containers - long journey, use ice or heat packs
  • nVehicle should be cleaned and hazardous materials removed
  • nCold food should be placed in the coolest part of the vehicle and packed up last.
  • Cold food should be held at or below 40 °F.

  • Hot food should be wrapped well and place in an insulated container.
  • Hot food should be kept hot, at or above 140 °F.

  • At destination, unload food first and place in temperature controlled area.
