Todd Billeci - Executive Chef

A native of Pompton Plains, NJ, Todd Billeci graduated from the Culinary Institute of America, NY in 1996. His culinary experience began during childhood while working with his grandfather, a butcher from Italy who not only taught him to cook but also to make his own sausage (which Todd still makes every Christmas). Soon after graduating, Todd became executive sous chef at the prestigious Boca Raton Resort. He later returned to New Jersey for five years during which he opened his successful catering company, Plains Pantry. The sunshine state was home again when he took the Fine Dining Chef position at the Woodfield Country Club. Subsequently he became the purchasing manager at Broken Sound Country Club before joining FAU Catering Services in 2009.
 
With a passion for food and a love of entertaining, Todd Billeci brings quantity and a quality dining experience to FAU Catering Services. He is an avid fan of Charlie Trotter who he refers to as “the perfectionist”. Todd, like Trotter believes that “The taste of free-range and organic products is so much better than the alternative. It is also good to know that you are eating unadulterated food and supporting farmers and growers who are directly connected with the land.”
 
Todd Billeci is a member of the American Culinary Federation. He enjoys golfing and spending time with his daughter Alexis.
